This method combines two of my favourite ingredients, peanut butter and chocolate. These are devine, so simple to make and ready in minutes. Perfect for those days when you’re craving a warm fresh cookie!
pinch of salt
100g unsalted butter, softened
100g crunchy peanut butter
100g golden caster sugar
100g soft brown sugar
1 large egg
150g plain flour
100g dark chocolate, ideally 70 % cocoa
Start by preheating the oven to 180 C (160 C fan oven).
Beat the softened butter until smooth and then add in the crunchy peanut butter, mixing well. Add the sugar and whisk again before adding the egg, a pinch of salt and the flour.
Cover the mixture and let it rest in the fridge for around 15 minutes. While the mixture is resting, chop the chocolate chunks into pieces and then stir them in to the dough. Take a spoonful of the dough, shape it in to a ball and place on to a baking tray lined with baking parchment. Leave a little room between them to allow them to spread.
Bake for 12 minutes.
