Homemade Lemon Curd

Ingredients
220g caster sugar
100g unsalted butter
zest of 5 lemons
juice of 5 lemons
3 eggs
2 egg yolks

Method
– Place the caster sugar, butter, lemon zest, and juice in a large bowl. Put this on top of a pan of boiling water and let the butter melt.

– Place the eggs and yolks in a small bowl and whisk. Add this to the mixture and whisk continuously so that the eggs don’t cook.

– Cook on low-medium heat for 15 minutes.

– Pass the curd through a sieve into a bowl. Let it cool before you decant into some jars and put it in the fridge to chill before you spread it on your next batch of toast.
