Vegetable peanut pulao

Veg and peanut pulao

Diwali is a time to celebrate with family and friends and lots of delicious food. This Diwali I have teamed up with Tilda to bring you this amazing Vegetable Peanut pulao which is ready in minutes and tastes absolutely delicious. perfect recipe to bring to the table for everyone to share.

(serves 4)

2 tbsp sunflower oil

1 bay leaf

4 cardamom pods

1 cinnamon stick

1 tsp cumin seeds

40 gms peanuts

1 onion, thinly sliced

1 carrot, cut into small pieces

1 small potato, cut into small pieces

50 gms frozen peas

15 fine green beans, cut into small pieces

1 tsp salt

1 tsp chilli powder

1 tsp garam masala

1 tsp turmeric powder

200 gms Tilda Grand rice

500 ml boiling water

 

To serve

20 gms fried red peanuts

20 gms fresh coriander leaves, finely chopped

 

Heat the oil in a pan and add the bay leaf, cardamom and cinnamon and as they sizzle add the cumin and peanuts. Let them sizzle for a few seconds then add the onions. Let the onion cook on medium heat for 5 minutes until they begin to soften.

 

Now add the rest of the veg and cook for 2 minutes. To this add the spices and cook for a minute before adding the washed rice and cook for a minute. Now add the water, mix well, cover and cook on low heat for 15 minutes until all the water has been absorbed and rice is cooked.

 

Let it rest covered for 5 minutes before serving.

 

Place it on the serving plate and sprinkle some fried peanuts and chopped coriander to finish.
